Hyperspectral imaging (HSI) is increasingly used in the food industry to improve quality control, safety, and process optimization. Oil and fat analysis

Accurate quantification of oil content and distribution in potato chips and prediction of marbling in beef, matching trained human judges in grading.

Defect detection

Identification of hidden bruises in apples and subtle changes in cooked food such as missing breading or undercooked/overcooked regions in chicken nuggets.

Food safety

Hyperspectral classification algorithms can locate contaminants or irregularities during processing, supporting high-throughput inspection lines.
